This week's wine pairing:
Von Winning, Weissburgunder (pinot blanc).
Rarely do you see Pinot Blanc as a single varietal. Usually, it's blended with other varieties to make up a sparkling wine, like Crement d'Alsace, where it adds body to the blend. In Italy you might know it as Pinot Bianco, but this week's pairing is Germany's Von Winning Pinot Blanc. Von Winning is one of the country’s oldest and most respected wineries. Founded in 1849 and falling back into the hands of the family in 2007, Von Winning is a practicing organic winery. They own vineyards across three villages; Ruppertsberg, Deidesheim and Forst. Herbicides and synthetic fertilisers are never used and all wines are unfined and unfiltered. Winemaker, Stephen Attman, describes his winemaking as “not doing the wrong thing at the wrong time”. This semi-sparkling Pinot Blanc is packed with citrus characteristics and really refreshing and light. A perfect pairing for this week's Nduja, if it lasts that long. This is some seriously smashable juice!
Each pasta is enough for two to share (or very generous for one).
