Garnacha Tintorera, Souson, Grao Negro, Mencía and Mouratón
Chalky tannins, floral, meaty but fresh
Peixes is run by Jesús Olivares and Curro Bareño, two-thirds of the talented Fedellos do Couto trio. The old vineyard sites are based around the DO of Valdeorras and are some of the highest vineyards in Galicia at 600-850m. Before Olivares and Bareño came along, most of the vineyards had been abandoned due to the grapes not being easy to ripen. In this case, the grapes were used for a local liqour called Orujo. The wine is a blend of Garnacha Tintorera, Souson, Grao Negro, Mencía & Mouratón. The winemaking is low intervention and constant across their three cuveés. They use whole cluster fermentation, long maceration and cool fermentation with indigenous yeasts. Wines are matured in large neutral oak and bottled without fining or filtration.
