Old school, elegant, buttery with citrus
Maison Louis Jadot was founded by Louis Henry Denis Jadot in 1859. The first vineyard bought by the Jadot family is the Beaune vineyard, Clos des Ursules, in 1826. They own 154 hectares throughout Burgundy. The hand harvested Chardonnay undergoes long, slow alcoholic fermentation with wild yeast followed by malolactic fermentation. This is what gives it it's signature butteriness. Located south of the Côte de Beaune, this Chardonnay comes from a vineyard that is spread on gentle slopes, between 230 and 360 metres above sea level. The ageing lasts about 15 months on lees (dead yeast cells from the winemaking process) before bottling.
