Saladini Pilastri Pecorino Offida 2019
this year has been weird for us all. full of ups and downs but one thing we've taken from it is to try new things. that's why this week's pairing is a grape you may not be familiar with - Pecorino. also the name of a cheese, this grape (thankfully) doesn't share many characteristics with it. also, it's a natural pairing!
Pecorino is known around the Marche region on Italy's east coast with the vineyards looking out over the Adriatic sea. it was pretty much extinct until the 80's having been replaced mostly by Trebbiano but many producers saw it's potential and now Pecorino is popping up more and more, and rightly so! light and straw coloured in appearance, Pecorino gives off elegant, complex floral and spiced aromatics. it's known for it's long shelf life but equally enjoyed in it's youth. Saladini Pilastri were one of Italy's first estates to go organic and have been practicing sustainable farming since 1994.
