Mark Haisma obsesses over vine quality and interventionist winemaking, his wines are not predictable. He trained with Dr. Bailey Carrodus in Yarra Valley. Carrodus is famous for pouring entire vintages down the drain if they weren’t up to his standards, something Mark has taken on board. It's a true expression of Burgundian terroir. The Saint Romain ‘Le Jarron’ is 100% Chardonnay made from 60 year old vines, on average. Saint Romain is a long valley that winds the whole way up to the high land, the cool air flows down the valley at night. This assures that the wines will always have bright acidity.
